1- 15oz. container of ricotta
3 eggs, lightly beaten
1/4 c. sugar
1 c. flour
4 tsp. baking powder
Dash of salt
1 Tbsp. brandy or rum of cream sherry (optional)
Oil for deep frying

Directions:
Directions:
Combine ricotta with beaten eggs and sugar. Sift flour with baking powder and salt; gradually add to ricotta mixture. Stir in brandy (if using). Let stand for about a half hour. Drop by teaspoon or Tablespoon, (according to size desired) fry in hot deep oil (375) and brown on all sides. Drain on paper. Serve dusted with confectioners' sugar.
