Potato Salad ~ Shrimp
6 Potatoes
3 eggs

1 onion - diced
3-5 Stalks Celery - Diced
1 Bell pepper ( Red or green) - Diced
Parsley chopped
1/3 - c. Sweet Relish
1c. Miracle whip
1 tsp mustard
tsp worstershire
~ ~ ~ ~ ~ ~ ~ ~ ~ ~
Crab boil
Shrimp
~ ~ ~ ~ ~ ~ ~ ~ ~ ~

Boil Potatoes till tender with peels on in pkg crab boil & water. ( approx. 1 hr)
Add eggs the last 20 min.

While Potatoes are boiling, Mix all of remaining ingredients (except Shrimp) cover and let sit in Refrigerator.

Boil Shrimp till tender in Crab Boil, ( can add Celery Stalks / leaves, 3-4 Bay leaves, lemon to cooking water if preferred) Cool immediately. cut into bit size & Add to Mixture.

When Potatoes are cooked ( run cool water & peel) . Place in Separate Bowl. While still WARM, Cube Potatoes. Some will fall apart like mashed Potatoes while cutting and peeling. - that is GREAT & how I make mine. Can allow 2 potatoes to cool for 30 minutes before cut into small cubes. ADD SALT & PEPPER TO POTATOES BEFORE ADDING THEM TO MIXTURE.
Mix all together, cover and refrigerate at least 12 hrs.
