4 c. sliced rhubarb
1 c water
1/2 c. sugar
1 (3oz) box strawberry or raspberry Jell-O
2 Tbs lemon juice
1 (11 oz.) can Mandarin oranges

Directions:
Directions:
Mix rhubarb , water and sugar in saucepan. Bring to a boil, reduce heat and simmer until rhubarb loses crispness. Remove from heat and stir in Jell-O until dissolved. Add lemon juice. Drain Mandarin oranges reserving juice in a measuring cup. Add water to make 1 cup. Stir liquid and oranges into the pan mixture. Pour into serving bowl (not a mold), and chill. Makes 8-10 servings as a side dish. Is good served with poultry.
