1 3 1/2 to 4 1/2 lb. chicken;
3 tbsp. fines herbes (a mix of chervil, parsley, tarragon and chives);

Directions:
Preheat oven to 450. Wash, dry, and truss chicken. Coat chicken with herbs and place breast side down on a rack in a roasting pan. Roast 45 minutes. Turn breast side up and roast an additional 45 minutes. Let stand 10 minutes before carving.
