4 large cloves of garlic, minced;
4 tsp. chopped fresh rosemary;
1 1/2 tsp salt;
1/2 tsp. pepper;
2 1/2 to 3 lb. boneless pork loin

Directions:
Directions:
Preheat oven to 400. Rub pork with olive oil, then coat with mixture of salt, pepper, garlic, and rosemary. Place pork in a roasting pan, fat side down and roast for 30 minutes. Turn fat side up and roast an additional 30 minutes to an internal temperature of 155. Remove from oven and let stand 10 minutes before carving.
