3 c. diced zucchini
4 large eggs
1/2 c. canola oil
1 c. bisquick
1/8 tsp. pepper
1/4 tsp. salt
1 small onion
1/2 c. grated cheese
Parsley chopped

Directions:
Directions:
Mix all together in a bowl and pour into buttered Pyrex dish. Bake at 350 for 40 minutes or until center comes out clean.
