1 1/4 lb. spinach fettucine
2 tbsp. butter
8 oz. cooked smoked ham, cut into strips
2 tbsp. flour
1 3/4 c. milk
3/4 c. heavy cream
1/2 c. grated Parmesan cheese
Salt and pepper to taste

Directions:
Directions:
Cook fettucine until tender but still firm. In large skillet melt butter. Add ham and saute until lightly browned. Stir in flour until well mixed. Gradually stir in milk until well blended. Bring the sauce to a boil, stirring constantly. Reduce the heat to low; stir in cream. Heat the sauce until just hot, but not boiling, about 1 min. Stir cheese into sauce until smooth. Season the sauce with salt and pepper. Drain the pasta thoroughly and transfer it to a serving dish. Top the fettucine with the ham sauce and additional Parmesan cheese, if desired, and toss gently.
