6 medium sweet potatoes

1/4 c. firmly packed brown sugar
1/2 c. butter
1/8 tsp. nutmeg
1/2 tsp. grated orange peel

1 c. peeled, cored, coarsely chopped apple
1/4 c. chopped pecans, toasted
pecan halves for garnish (optional)

Prick sweet potatoes with a fork to allow steam to escape. Bake at 375 for 35-45 minutes or until tender. Cut thin lengthwise slice from top of each sweet potato; scoop out inside, leaving a thin shell. Set shells aside.

In large mixer bowl place hot sweet potato and remaining ingredients except, apple, chopped pecan and pecan halves. Beat at medium speed, scraping bowl often, until well mixed and no lumps remain.

Stir in apple and chopped pecans by hand. Place shells on 15 x 1 0 x 1 inch baking sheet; fill shells with sweet potato mixture.

Garnish each sweet potato with pecan halves.

Bake for 15-20 min at 375 or until heated through.
