4 large baking potatoes
1 tsp. salt
1/2 tsp. pepper
2 eggs, beaten
4 Tbsp. butter
3/4 c. milk (approximate)
chives and cheese

Directions:
Directions:
Bake potatoes at 400 about 45 minutes. Halve and hollow out. Mash potatoes well. Add salt, pepper, beaten eggs, butter and enough milk to give them a creamy consistency. Refill potato shells with mixture. Top with cheese and chives. Bake until brown at 375.

One of my favorite foods that Mom makes. We usually had these for Mamaw and Papaw's birthday dinners.
