1 c. regular rolled oats 1 c. apple juice 1 c. enriched soy milk 2 tbsp. plain nonfat yogurt 1 tbsp. honey 1/4 c. dried cranberries Pinch of cinnamon
Combine oats, apple juice, and soy milk in a pan and cook over high heat, simmering but not boiling. Stir often, until oats are soft but not mushy, about 6-8 min. Remove from heat and add yogurt, honey, cranberries, and cinnamon. Serve hot.
