1 bag (10 oz.) frozen chopped spinach
18 - 20 large mushrooms
1 tbsp. oil
1/2 c. onion, finely chopped
2 - 3 cloves garlic, minced
1/2 c. dried bread crumbs
1 tbsp. lemon juice
1 egg beaten
salt and pepper to taste

Directions:
Directions:
Cook spinach according to package directions, drain. Remove stems from mushrooms and chop stems finely. Arrange mushroom tops on a cookie sheet. Add oil to large frying pan and saute onion, garlic, and mushroom stems. Combine spinach, bread crumbs, lemon juice, egg, and saute mixture. Blend well. Fill mushrooms with mixture (if desired top with grated cheddar cheese). Bake for 10 - 15 minutes at 400. Serve hot.
