Four Cornish game hens

Marinade:
1 cup extra virgin olive oil
2 tsp coarse black pepper
1 tsp coarse salt
1 tsp fresh rosemary
1/2 tsp cayenne pepper
1/2 cup of fresh lemon juice

Directions:
Directions:
Clean and split the Cornish game hens. Trim excess fat and press down firmly to flatten bird. Marinade in olive oil and lemon juice for as little as 2 hours and as much as 24 hours. Mix dry ingredients and liberally coat the hens. Let stand for at least one hour or until room temperature. Grill over medium high heat, skin side first, for 30-40 minutes, turning every 7-10 minutes. When ready, skin should be crispy and juice should run clear when pierced with a fork. Serve over a bed of garlic mashed potatoes. Serves 6-8.
