Four rib eyes, about one half pound each

For rub:
2 T. brown sugar
1 1/2 T. fresh cracked pepper
1 1/2 T. paprika
1 T. ground cumin
1/2 T. coarse sea salt

Directions:
Simply put, a properly seasoned and cooked rib eye is one of life's true pleasures. This dry rub recipe is simple, yet one of the best.

Prepare the dry rub in a mixing bowl. Liberally coat the rib eyes and let sit in refrigerator for at least 30 minutes. Prior to cooking, bring the meat to room temperature. Grill the steaks over medium high heat for six to eight minutes, or shorter if you desire your meat rare. The rib eyes not a lean cut so mind your flame and watch for flare ups. Serve this recipe with a nice polenta and roasted tomatoes. Serves 4.
