8 chicken quarters
1/4 cup lemon juice
2 T. olive oil
5 T. minced garlic
1 T. coarse sea salt
3 T. brown sugar
1 tsp. dry oregano
1/4 cup red chili powder
1/4 cup minced cilantro

Directions:
Directions:
Brush the chicken with lemon juice. Mix olive oil, minced garlic, salt, brown sugar, oregano, chili powder, and cilantro into a paste. Use a food processor if necessary. Generously rub paste over, and under the skin, of the chicken. Refrigerate for 2 hours. Remove 45 minutes prior to cooking. Grill over medium high heat for 30 minutes turning every 5 minutes. Serves 8.

Tips: For a crispy finish place chicken skin side up in the oven on broil for 3-5 minutes prior to serving.
