2 1/2 T butter or margarine
1 medium sized onion, finely chopped
1 tsp crush hot red pepper
1 T soy sauce
4 heaping T chunky peanut butter
1 t lemon juice
1 C coconut milk (or 1 cup water and 1 T grated coconut)

Directions:
Directions:
melt butter, add chopped onion and saute until golden. Add crushed red pepper, soy sauce, and peanut butter. Allow peanut butter to melt, then add lemon juice and coconut milk. Cook and stir until well blended.
