1 1/2 lbs dry Chinese rice noodles
warm water
6 T shredded leeks
4 T chopped celery stalks and leaves
2 C shredded Chinese cabbage
2 cloves garlic, minced
2 T bean sprouts
1/2 lb fried pork, diced
1 C shrimp or prawns
2 T soy sauce

Soak noodles in warm water; drain. Add more water and bring to a boil. Turn off heat and soak noodles again until tender, but not too soft; drain. Heat oil and fry leeks, celery, and cabbage with the garlic. Add a little water and bean sprouts and simmer until crisp-tender. Mix vegetables with the noodles; add the meat and shrimp. Season with the soy sauce. Reheat for a few minutes in the oven.
