2 C water
1 1/2 tsp salt, divided
1 1/2 pounds boneless beef chuck or flank steak
6 large carrots, quartered
6 medium sized potatoes, quartered
6 medium sized onions, diced
freshly ground black pepper

Directions:
Directions:
Bring water and 1 teaspoon salt to a boil. Add meat, cover, and simmer for about 2 hours. Add vegetables and continue cooking for about 1/2 hour or until vegetables are tender. Add more liquid if needed. When this dish is done all the liquid should be absorbed. When tender, remove meat and keep warm; puree the vegetables to a consistency of mashed potatoes, and season with remaining salt and pepper. Place the vegetables in the center of a warm platter and cut meat into thick slices. Arrange around the vegetable puree.
