3 C milk, divided
2 eggs, separated
3 T sugar
3 T cornstarch
1 tsp vanilla
1/2 C raspberry or strawberry preserves

Directions:
Directions:
Bring 2 1/2 Cups of the milk to a boil over medium heat. Beat egg yolks till foamy; add sugar mixed with cornstarch, 1/2 cup cold milk and vanilla. Stir until smooth, then gradually stir in the hot milk. Heat mixture to a boil, stirring constantly. Boil for 2 minutes; cool thoroughly. Beat egg whites until stiff; continue beating while slowly adding preserves. Pile the beaten egg white mixture by spoonfuls on top of cooled pudding.
