3/4 lb ground beef
1 1/2 qts boiling water
1 lg onion, finely chopped
1/2 C uncooked rice
vegetables, chopped (carrots, celery, any variety, but fresh if possible)

Directions:
Directions:
Salt and pepper ground beef to taste and shape into firm balls about the size of a small egg. Place balls in a soup kettle; pour boiling water over them. (Water must be boiling to prevent meat balls from breaking.) Reduce the heat and simmer meat for 10 minutes. Add the onion, rice, and other vegetables. Add more water if a thinner soup is desired. Bring to a boil again, then reduce to simmer and continue to cook until rice and vegetables are tender, about 20 minutes.
