2 C Split green peas
3 qts. Cold water
2 lbs Pork hocks
3 Onions, chopped
salt and pepper to taste
1 1/2 C celery, chopped
3 potatoes, sliced
4 smoked sausages

Directions:
Directions:
Wash and soak peas overnight. In a large pot, combine water and peas and boil for 2 hours. Add pork hocks and cook for 1 hour. Add remaining ingredients except the sausages. Cook until smooth and thick, about 3 hours, adding the sausage the last 15 minutes.

The longer the soup simmers the better the taste. the next day the soup tastes even better.
