2-3 lbs. Chicken (whole or pieces or breast all work)
1 T all purpose flour
2 T vegetable oil
1/2 tsp. salt
2 T Mrs.. Dash
dash pepper
1 Green Pepper (diced)
1 Red Pepper (diced)
1 onion (thinly sliced)
1 8 oz can pineapple (diced)
2 tsp. soy sauce
2 tsp. brown sugar
2 tsp. corn starch
2 tsp. chicken stock

Preheat oven to 350 - In large plastic bag mix flour, salt, Mrs.. Dash & pepper. Add 1/3 chicken & shake to coat, Repeat until all chicken is coated. Heat oil in large skillet & saute chicken (over med. heat) until brown on all sides. Place in lightly oiled 9 x 13" baking dish & bake covered for 45 minutes.
Make Sauce (while chicken bakes) In same large skillet saute vegetables about 5 minutes, until translucent. Add the pineapple, soy sauce & brown sugar. Mix together cornstarch & chicken stock& add to skillet. Stir all together & let simmer for 3 minutes until thick & clear. Pour sauce over chicken & bake until tender.

This is great with rice, a few raisins in the rice are wonderful (just add extra water to rice). Extra wonderful if eaten on the beach in Hawaii.
