2 potatoes (diced)
2 carrots (diced)
1med red pepper (diced)
1med green pepper (diced)
1med onion (diced)
Mrs.. Dash (to taste)
1 box Manischewitz Matzo Ball & Soup Mix
2 T vegetables oil (for matzo balls)
2 eggs (for matzo balls)
2 T oil for cooking veggies
2 1/2 Quarts of water

Directions:
In 4 quart pot put in 2 T of oil & heat, add vegetables (I start with potatoes * carrots because they take longer to cook) then add other veggies. Cook stirring occasionally, while they are cooking make matzo balls according to instructions on the box & refrigerate for 15 minutes. When the veggies are browned add water & soup mix & bring to boil. Make matzo into balls & drop into soup, cover reduce heat to simmer for 20 minutes.

I throw in any left over meat & veggies you have in the frig. This seems like a lot of work but it is really easy. Esp if you have a good dicer!
