4 c. sifted flour, plus extra for handling dough
1/2 tsp. salt
1 tsp. baking powder
1 c. butter, softened
2 c. sugar
2 eggs
Zest of 2 lemons
2 tsp. fresh squeezed lemon juice

Directions:
Directions:
In a large bowl sift together flour, salt and baking powder. In a large bowl using an electric mixer on medium speed beat butter and sugar until fluffy. Beat in eggs. Add flour mixture, mixing on low speed until thoroughly combined. Stir in lemon zest and juice. Shape dough into a disk, wrap in plastic and refrigerate at least 30 min.
Preheat oven to 325. On a lightly floured surface, roll dough to 1/8 in. thick. Cut into desired shapes, transfer to ungreased baking sheets and refrigerate until firm (about 15 min). Bake until edges just start to brown, 8 to 10 min.
