6 T. butter
1 c. flour
1/2 tsp. salt
1 c. grated Gruyere
dash of freshly ground pepper
4 eggs

Directions:
Directions:
Preheat oven to 425. Lightly butter a baking sheet or pie plate.
Combine water, butter, salt, and pepper in a saucepan and heat until butter is melted and all is boiling rapidly.
Add flour to butter mixture and continue cooking, stirring, until mixture forms a ball and leaves the sides of the pan. Remove from heat. Breathe.
Beat in eggs one at a time, incorporating each thoroughly before adding the next. Stir in all but 2 T. of the cheese.
Place rounded tablespoons of dough on the baking sheet in a 9" ring, leaving a 2" circle in the center. Sprinkle remaining cheese on top.
Bake 40-45 minutes until well-puffed and golden brown. Serve immediately.
