- Head of celery
- 2 or 3 golden apples
- handful or two of lettuce or spinach leaves
- a couple spoonfuls of chopped parsley
- a handful of one or more of these types of dried berries/fruits: goji berries (found in many health-food stores), raisins, dried cranberries, or currants
- a handful of pine nuts, pecans, or walnuts
- raspberry vinaigrette

1. toast the nuts (use a heavy pan on the stove; no oil)
2. Wash the celery, apples, parsley, lettuce/spinach
3. If the celery is tough, especially the outer stalks, break in half and pull the strings off.
4. Slice the celery in diagonal slices.
5. Slice the apples in thin slices (1/4" or less is nice)
6. Combine celery, applies, parsley, and lettuce/spinach in a salad bowl.
7. Sprinkle the dried fruits or berries on top.
8. When the nuts are cool, chop them roughly and sprinkle them on top.
9. Just prior to serving, drizzle the raspberry vinaigrette on top and toss. Alternatively, allow guests to pour dressing on their individual servings.
