2 chicken breasts cubed
1 lb. + 8 medium shrimp
1 c. spinach, chopped
1 8 oz. water chestnuts
2 tsp. light brown sugar
2 tbsp. rice wine
3 tbsp. soy sauce
1 tsp. scallion
2 tsp. ginger
4 c. chicken stock
24 wanton wrappers

In a bowl combine 1 tsp. brown sugar, 1 tbsp. rice wine, 1 tbsp. soy sauce, 1 tsp. scallion, and 1 tsp. ginger. Mix well. Ground 8 shrimp and add to the mixture. Let sit for 30 minutes. Fill wrappers and use finger to moisten the ends with water to secure the fold.

Boil stock. Add remaining ingredients. Complete with wantons. Boil 15 minutes.
