4 chickens, cut in quarters
1/3 cup olive oil
1/2 cup gold tequila
1/2 cup limejuice (fresh)
2 cloves garlic
1/4 cup Grand Marnier
1/4 tsp salt
1/2 tsp pepper
1/3 cup cream
1 tbsp butter
1/2 cup each red and green peppers, minced
2 tsp cilantro

Directions:
Directions:
Combine lime juice, tequila, olive oil, Grand Marnier, cilantro and garlic in large bowl. Place chicken in bowl to coat with the marinade, cover and refrigerate for 2 hours or more. Remove and reserve marinade. Season chicken with salt and pepper and place in baking pan, skin side up. Bake at 350 degrees for 30 minutes. Place pan with drippings on stove and add a little tequila to loosen the drippings from pan. Add cream and butter, stirring until well blended. Add peppers and cook down until sauce reduces and peppers are slightly soft in texture. Spoon sauce over chickens and serve.

This is a dish I had once at a restaurant on the Riverwalk in San Antonio. I always liked the idea and finally found a recipe for it, which I borrowed and am now sharing with you. This is not my own, but it is very clever, I think.
