1 cup yellow cornmeal
1 tbsp baking powder
tbsp baking soda (optional)
1 cup all-purpose flour
1 tbsp salt
1 egg, beaten
cup of buttermilk
4 Jalapenos, chopped w/ seeds
cup yellow onion, chopped
2 tsp bacon drippings

Directions:
Directions:
Mix all ingredients in a bowl and form into small balls (about 1 inches in diameter). Fry in hot cooking oil until golden brown on the outside and flaky on the inside. Just double the recipe if you need a larger batch.
