2 lbs ground buffalo meat
2 tbsp red onion, finely chopped
2 tbsp green pepper, finely chopped
1 tsp parsley or cilantro, finely chopped
1 tbsp Worcestershire Sauce
1 tbsp garlic powder
salt and seasoned black pepper to taste
pinch of nutmeg (optional)

Mix vegetables and seasoning with the ground buffalo and form into patties about ½ inch thick. Grill on barbecue pit, basting with mesquite flavored barbecue spray, until cooked to your desired taste.

Buffalo is slightly leaner than beef, so be careful no to overcook it. Serve on either an onion bun or a Kaiser bun for a unique taste. You may add cheese, mushrooms, grilled onions or any condiments you use on a traditional hamburger.
