3 c hot cooked rice or couscous
1 T olive oil
1/4 c coarsely chopped almonds
2 garlic cloves, minced
8 chicken thighs, skinless
1 c thick chunky salsa
1/4 c water
2 T dried currants or cranberries
1 T honey
3/4 tsp cumin
1/2 tsp cinnamon

Directions:
1. While couscous/rice is cooking, heat oil in large skillet over med/high heat until hot. Add almonds; cook 1-2 minutes or until golden brown. Remove from pan with slotted spoon; set aside.
2. Add garlic to skillet; cook 30 sec., add chicken; cook 4-5 minutes or until browned, turning once.
3. In a medium bowl, combine salsa, and all remaining ingredients and mix well. Add to chicken; mix well. Reduce heat to medium; cover and cook 20 minutes or until chicken is fork tender and juices run clear, stirring occasionally. Stir in almonds. Serve chicken with couscous/rice.
