7-6" Corn tortillas, 4 thinly sliced, 3 coarsely chopped
1 med. yellow onion sliced
2 whole cloves garlic
2 T tomato paste
2 jalapeņo, seeded/minced
5-6 c chicken or turkey broth
2 c cooked turkey, chopped
1 (15 oz) can black beans, drained and rinsed
6 oz farmer, brick or queso fresco cheese, 1/4" cubes
1 avocado sliced
2 T lime

Pico de gallo
2 med. tomatoes, seeded/diced
1/2 c scallions
1/4 c chopped cilantro
2 T lime
1/ tsp salt

1. Heat 1/3 c oil in 10" skillet. Add tortilla strips in single layer batches. Fry until crisp, 1 1/2 - 2 minutes drain on paper towels.
2. In 6 qt. pot, carmelize onions and garlic in 2 T. oil, 20 minutes. Add tomatoes, chopped tortillas, paste and one jalapeņo. Saute 2 minutes.
3. Place in blender and puree, return to pot. Add broth, turkey, beans and jalapeņo. Simmer 10 min.
4. To serve - sprinkle cheese cubes in bowl, ladle soup over top. Garnish with fried tortilla strips, Pico de Gallo and avocado slices.
