1 pound lean ground beef
1 cup onion, chopped
1 cup green pepper, chopped
1 T. margarine
1 - 28 oz can diced tomatoes, with liquid
1 - 4 oz. jar of sliced mushrooms, drained
1 - 2 1/4 oz. can ripe olives, sliced
2 cans cream of mushroom soup
3/4 cup water
2 t. dried oregano
2 cups shredded cheddar cheese
1/4 cup Parmesan cheese (in shaker)
12 oz. spaghetti, cooked & drained

Brown beef & drain. In large skillet, saute green pepper & onion in 1 T. margarine til tender. Add beef, tomatoes, mushrooms, olives & oregano to skillet. Simmer uncovered about 10 minutes. In a bowl combine soup & water, mix to smooth. Place half the spaghetti in a 9 x 13 greased baking dish. Top with half the meat mixture & half the cheese & half the soup mixture & repeat the layers. Sprinkle with Parm cheese, bake uncovered @ 350 for 30 minutes. Allow to cool slightly before serving. Serve with a green salad & garlic toast.

I received this recipe from Julie Lane, a pharmacist at Wilson Pharmacy. This recipe makes enough for 2 meals for a family. If you double the recipe, it will feed a crowd of about 20 people.
