4 C. potatoes, thinly sliced
2 C. Velveeta, cubed
1 stick butter, cubed
4 Tbs. flour
2 tsp.salt
3 tsp. freshly ground black pepper
2 C. half and half
4 C. cheddar cheese

Directions:
Directions:
Preheat oven to 375 degrees.
In a greased baking dish, layer bottom with potatoes. Equally layer all the remaining ingredients with flour, salt, pepper, butter and cheese between each layer. Pour half and half over the layers.
Cover. Bake for 35-40 minutes or until potatoes are fork tender and sauce is thickened.
Increase oven temperature to 400 degrees.
Remove cover and sprinkle top of potatoes with grated cheddar. Return to oven and bake until cheese is golden brown.

I also like to make the sauce on top of the stove and just pour it over the potatoes. It makes the sauce very creamy.
