Meringue Crust:
4 egg whites at room temp
1 cup sugar
tsp cream of tartar


Lemon Cream Filling:
8 egg yolks
2 T. lemon rind
6 T. lemon juice
1 cup sugar
tsp. salt
2 cups heavy cream

Directions:
Directions:
For Crust: Beat egg whites & cream of tartar till light and fluffy. Gradually add sugar till peaks form. Generously grease 9 pie pan. Gently spread the meringue into the pan. Build up sides like a crust. Bake at 275 for 1 hr. Turn off oven & let the crust sit for 2 hours.

For Filling: Mix the yolks, rind, juice, sugar, and salt in a double boiler. Stir over medium heat for 8-10 minutes; till very thick. Let mix cool. Beat the 2 cups of whipping cream. Fold the lemon mix and whipped cream together. Pour into cool shell. Sprinkle some extra lemon zest on top of pie. Refrigerate overnight or for a few hours.
