1/2# lean ground beef
1/2 C minced onion
1/4 C. chopped green pepper
2/3 C. tomato paste
2 C. water
1 tsp. salt
1/2 tsp. pepper
1 tsp. sugar
1-1/2 tsp. Italian seasoning
8-9 manicotti shells
2 C. ricotta cheese
1 C. shredded mozzarella cheese

Directions:
Directions:
Saute meat, onion and green pepper until meat no longer is pink. Drain off any fat. Add paste, water, salt, pepper, sugar and Italian seasoning. Simmer 15 minutes.
In the meantime par-boil the manicotti in boiling salted water for 4 minutes. Drain and then place on paper towels.
Combine cheeses.
Fill cooled shells with combined cheeses and place in shallow, greased baking dish.
Cover with sauce.
Bake in 350 degree oven for 20-30 minutes.

Just needs a big green salad and garlic toast to make an Italian feast. I traded dinner and dessert for weekly piano lessons for 4 children. This was an often requested dinner.
