2 chicken breasts, cubed 1 clove garlic, minced 2 c. cooked rice (brown or white) 1 c. salsa 1 c. shredded cheddar cheese 1 tbsp. cooking oil (light olive oil is best)
Heat oil in a large skillet. Add chicken and garlic and cook till chicken is done. Add rice and salsa and mix well. Spray an 8x8 pan with nonstick cooking spray. Transfer rice mixture to baking dish. Top with cheese and microwave till cheese is melted (1-3 minutes). Serve.
