6 Green onions, thinly sliced
2 cans (14 ounces each) low sodium chicken or vegetable broth
2 cloves garlic, finely chopped
1 jar (2 ounces) diced pimientos, undrained (I think I will probably eliminate this)
2/3 cup uncooked wheat berries
1/2 cup each uncooked: hulled or pearl barley, and wild rice
1/4 cup butter or canola oil (I may use less)
1/4 cup chopped fresh parsley
1 tablespoon finely shredded lemon zest (I will eliminate this)
1/2 teaspoon salt (might eliminate this also) Ground pepper to taste.

Combine onions through canola oil in 3-4 quart slow cooker. Cover, cook on low until liquid is absorbed and grains tender (4-6 hours.) Stir in remainder of ingredients. Season to taste. (I think I will saute onions and garlic and add red peppers, celery, carrots, broccoli stalks, mushrooms , etc. to get more veggies in.) If it is a busy day where I am short of time, I may add browned lean ground beef and make a hot dish out of it.
