2 Medium Cucumbers
1 large white onion

1st Solution
3 Cups Water
1 Tbsp. Salt
(Make enough to cover)

2nd Solution
3/4 Cup Sugar
3/4 Cup Water
1/4 Cup white or cider Vinegar

Directions:
Directions:
Peel the cucumbers and the onion, then slice 1/8 inch thick. Place in bowl and add ingredients of 1st Solution (enough to cover). Let stand for 3 hours.

Pour into colander and rinse very well. Place contents into container and add 2nd Solution. I add a lot of pepper at this stage. Refrigerate overnight before serving.

I make these so much, but the quantity of things may be a little off. Adjust the taste after letting set overnight. If vinegar is too strong add sugar. I end up using a lot of sugar in mine but it is up to your own taste.
