2 cups mashed banana
2 cups flour
3 eggs
1 cup sugar
1 cup oil
1 tsp. soda
1 tsp vanilla
tsp. salt

Directions:
Directions:
Combine banana, eggs, oil, and vanilla & mix well. Sift together flour, sugar, soda, & salt and add to banana mixture. Pour batter into greased & wax-paper-lined 9x5-in loaf pan.
Bake at 350 for 50 min, or until done. OR fill greased muffin pans full and bake at 350 for 25 minutes.

Makes 1 loaf or 16 muffins or 4 mini loafs.
