3 lbs fresh okra, sliced
5 ears fresh corn, sliced off the ear
cup celery, finely chopped
1 cup green pepper, finely chopped
2 cups red onion, finely chopped
2 cloves garlic, pressed
1 bay leaf
1/3 cup bacon grease
2 lbs ripe tomatoes, chopped (canned tomatoes are optional)
tsp thyme
lb bacon, fried crisp
dash of Tabasco
salt and pepper to taste

Fry bacon until crisp and set aside. Saute okra in bacon drippings over low heat until stringiness is gone. Add onions, celery, garlic, green pepper and bay leaf to drippings and cook until transparent. Add tomatoes and cook for about 5-6 minutes, then add corn and seasonings. Simmer for about 10-15 minutes. Crumble and fold in the bacon and serve hot. (Olive oil can be substituted for the bacon grease, if you prefer.)
