1 cup washed wild rice
1 cup sharp cheddar cheese grated.
1 cup chopped rice olives (about 2-4˝ oz cans)
28oz can (3 cups) Trader Joe’s peeled plum tomatoes with basil
1 (4oz) can sliced or pieces of mushrooms & liquid
˝ cup chopped onion
˝ cup olive oil

Directions:
Directions:
Let the wild rice soak in boiling water for 1 hour. After it cools, repeat boiling water instructions.

Mix all ingredients with wild rice and refrigerate for one day. Next day, bake in 350° oven, in a covered casserole, for 1˝ hrs. Add salt & pepper to taste.

Optional: After cooking, add 3oz pkg. cream cheese. Stir until melted. Freezes well.
