2 lb sirloin steak (or tenderized round steak)
2 eggs
2 cups vegetable oil
2 cups all purpose flour
cup milk
salt and pepper to taste

Directions:
Directions:
Pound steak to tenderize and set aside. Whisk eggs in bowl. Dredge steak in eggs, then in flour seasoned with salt and pepper. Fry steak in oil until golden brown. Remove from pan and sprinkle 2 tablespoons of flour in drippings, stirring briskly. Turn down heat and add milk, continuing to stir until it thickens into a gravy. Add salt and pepper to taste and pour gravy over steaks.

This dish is sometimes referred to as Country Fried Steak. The term "Chicken-fried" simply means it is cooked similar to the way you cook country fried chicken. The Stallion restaurant in Austin, Texas was a favorite local spot that served this dish. The Stallion is long gone now, but the dish is still a favorite and part of our Texas history!
