1 lb broccoli, cut in small spears
1 T. olive oil
2 tsp. salt
tsp ground black pepper
1/2 tsp brown sugar
cup plus 2 T. balsamic vinegar
1 lb penne
lb butter, cut in pieces

Directions:
Directions:
Heat oven to 400. Cut 1 lb. of broccoli into small spears for roasting. Toss them with 2 T. oil and tsp. each of salt & pepper and roast for about 15 min. Meanwhile, put the vinegar in a small saucepan. Simmer until 3 T. remain. Stir in the brown sugar & the remaining tsp pepper. Remove from heat. Cook the penne in a large pot of boiling salted water until just done (13 min). Drain the pasta and toss with the butter, vinegar, broccoli, Parmesan, and the remaining 1 tsp. salt. Serve with additional Parmesan cheese.

Serves 4.
