6-8 chicken breasts
16 oz white beans (Great Northern)
6 cups chicken stock
5 cloves fresh garlic, pressed or minced
1 yellow onion, diced
6 pieces of bacon
cup of fresh tomatoes, diced
3 Serrano chiles (canned version okay)
1 tbsp cumin powder
1 tbsp thyme
1 pinch sage
salt and seasoned pepper to taste

Directions:
Directions:
Boil chicken breasts in water until tender (about 30 minutes). Cut into small pieces and set aside. Place beans in water and simmer for about 1 hour with garlic and onions. Add the chicken and chiles to the beans and continue to simmer until it reaches a slightly thick consistency, but with some broth still remaining, creating a stew-like texture. Fold in bacon pieces and top with fresh cilantro and chopped tomatoes.
