"When I'm at a Chinese restaurant having a hard time with chopsticks, I always hope that there's a Chinese kid at an American restaurant somewhere who's struggling mightily with a fork."--Rick Budinich
1 cup raw peanuts 1 cup granulated sugar 1/2 cup clear Karo Syrup 1/8 teaspoon salt 1 teaspoon margarine 1 teaspoon vanilla extract 1 teaspoon baking soda
Combine nuts, Karo syrup, sugar & salt, cook in microwave on high for 7-8 minutes. Stir after 4 mintutes, and again at the end of 3-4 minutes. Add in butter & vanilla. Cook an additional 1-2 minutes, and add soda. Quickly pour onto cookie sheet sprayed with Pam, allow to set break into pieces.
This recipe reminds me of arguing with my brother over the crumbs left on the cookie sheet after mama collected all the "good" pieces. I always won, purhaps the start of my life-long diet issues.
