1 fully cooked (7-9lbs) bone-in smoked ham, shank or butt portion
9 bay leaves, stems removed & crushed
20 cloves
9 garlic cloves, crushed
cup packed brown sugar
1 T. red pepper flakes
1 tsp. paprika
cup cider vinegar
cup peach preserves

Directions:

Line an 11x17-in. roasting pan with foil. Score top and sides of ham in small crisscross pattern. Stud ham with cloves, combine bay leaves, garlic, sugar, red peppers, paprika, and vinegar in a bowl. Rub 2/3 of spice mixture over ham. Place ham in prepared pan; cover and refrigerate overnight. Baste ham with sauce from pan. Heat oven to 325. Insert meat thermometer. Bake ham 2- 2 hours (after 1 hr, cover ham loosely with foil to prevent over browning) until meat thermometer inserted in center registers 140. Combine preserves and remaining spice mixture in small bowl. Uncover ham and brush with mixture during the last 30 minutes of baking. Cover and let stand 15 min.

Serves 8-12.
