1 lb. carrots
2 eggs
Salt & Pepper, to taste
Miracle Whip

Directions:
Directions:
Peel 1 lb. carrots and boil till very tender. Boil 2 eggs, peel and cool. Mash with a fork and mix together. put enough Miracle Whip to make moist but not mushy.

My Mother made this when i was a little girl and she stuffed each one. As we get older, we must mash them together and put in a pretty bowl. Very good with holiday meals. I make a lot more on the same ratio.
