8 ears of corn, rubbed with olive oil
3 red peppers, sliced, rubbed w/ olive oil




Mixture:
red onion, diced
Cilantro, finely chopped
cup Olive Oil
1-2 T. white balsamic vinegar
Lemon juice from of lemon
Salt & pepper to taste

Directions:
Directions:
Grill the corn and red peppers, about 5-6 minutes. Slice corn kernels from ear and chop red pepper. Place in bowl with mixture above. Can be served hot or cold.
