5 cups water
1 cup dried split peas
1 onion, minced
1 carrot, minced
3 bouillon cubes
4 sprigs parsley,finely chopped
1 tsp. sugar
1 bay leaf
3 T. any oil (preferably good olive oil)
3 T. all-purpose flour
2 cups milk
2 eggs
Salt & pepper to taste

Pour the water and peas into a large stockpot. Cover and bring to a boil. Turn off the heat and let the peas sit for 1 hr. Then add the onion, carrot, bouillon cubes, parsley, sugar, and salt & pepper.

Cook for another 2 ˝ to 3 hrs. over low heat. Add the bay leaf. Mix the oil and flour, making a paste. Blend into the soup. Add the milk. Beat the eggs in a bowl with a little of the soup. Remove the bay leaf from the soup. Stirring continuously, bring the soup to a boil, then add the eggs. Reduce the heat, simmer and stir some more. Pour small batches of the soup into a blender and blend until smooth. When all of the soup is processed through the blender, reheat and serve hot.
