Grilled Citrus Salmon Caesar Salad Recipe

1 cup orange juice
1/8 cup lime juice
1/8 cup lemon juice
cup olive oil
1 T. chopped fresh garlic
1 T. sugar
tsp. salt
grated lemon zest
tsp. freshly ground
4 salmon fillets
black pepper

Caesar Salad Dressing:
1 cup mayonnaise
2 T. extra virgin olive oil
tsp. salt
tsp. freshly ground black pepper
1 clove garlic, minced
1 T. fresh lemon juice
2 olive oil packed anchovy
1 tsp. worcestershire
fillets chopped fine & patted dry
2 T. finely grated parmesan cheese

Combine all ingredients, except lemon zest, in a bowl & whisk together. Put salmon fillets into a ziplock bag & add the marinade. Sit in refrigerator for 1 hr. Take salmon fillets out of marinade & grill on a very hot grill or grill pan on the stove for about 3-5 minutes per side. When salmon is done, sprinkle grated lemon zest over hot salmon and let sit for a few minutes. Serve this on top of your Caesar salad with croutons and parmesan cheese.

Whisk all dressing ingredients together in a bowl.
